Our family's favorite for Sunday mornings. Used in other recipes "Sausage Blini" and "Stuffed Blini". These are great wrapped around fresh strawberries and a little strawberry jam.

Ingredients
1 1/2 cups Flour
1 tbs Sugar
1/2 tsp Baking Powder
1/2 tsp Salt
2 cups Milk (may need to add more)
2 tbs Butter, melted
1/2 tsp Vanilla
2 Eggs
Preparation
Mix flour, sugar, baking powder and salt. Beat with hand mixer while slowly adding remaining ingredients. Batter should be quite runny. Pour scant 1/4 cup batter onto pre-heated skillet (medium heat). Immediately rotate skillet until thin film covers bottom. Cook until very light brown. Run spatula around edge to loosen; turn and cook other side until light brown.
