Banana Zucchini/Squash Bread

A family Recipe

This is a wonderful blend of 2 delicious breads... A favorite with my sons and husband... After 20+ years, it is still a favorite of mine, too. I usually do this recipe plus a half to bake in a 9"x13" cake pan. If I feel like serving as a dessert, I just drizzle some melted cream cheese icing over the top and serve...

Ingredients

2 cups Mashed bananas

3 Eggs, beaten

2 cups Sugar

1 cup Vegetable oil

2 tsp Vanilla

2 cups Grated zucchini or yellow squash (Raw Pumpkin, not canned or pureed, may be used, also)

3 1/2 cups Flour

2 tsp Salt

1 tbsp Baking powder

1 tsp Cinnamon

1 cup Chopped walnuts (optional)

Preparation

Preheat oven to 350*F.

Grease two 9" x 5" x 3" loaf pans, or a 9'x13' pan if recipe plus half is used, and set aside.

In a large mixing bowl, combine eggs, sugar, oil and vanilla. Blend well. Stir in zucchini until it is well blended into the egg mixture.

In a separate bowl, combine flour, baking pwder, and salt.

Slowly add flour mixture to the liquids until well mixed. Add cinnamon, walnuts, and bananas. Mix until well blended.

When completely mixed, divide into loaf pans, or pour entire mixture into cake pan. (*Note: If using a cake pan, place a cookie sheet under cake pan, just in case...*)

Bake for 45 minutes or until toothpick of fork can be inserted and pulled out clean.

Cool in pan(s) for at least 5 minutes then you may remove. If using the the cake pan, you can keep bread in there, if you wish... It is less messy to drizzle icing on if left in cake pan...
