Every one has a Chicken Salad that they love, here's mine... and under 250 cal's you can love it too!
1/2 cup Mayonnaise
1 teaspoon Lemon juice
1/2 teaspoon Horseradish
4 cups Cooked Chicken, Chunked
3 Hard Boiled Eggs, chopped
1 stalk Minced Celery
1/8 cup Minced Shallots
1/2 cup Almonds, sliced or slivered
1/2 cup Freash Pineapple, chopped
In a large bowl mix the Mayonnaise with the lemon juice and horseradish.
Add the rest of the salad's dry ingredients at once, and fold in untill throughly coated.
