Chicken Fajitas

Easy and tasty!

Ingredients

4 Chicken thighs or 2 breasts

1 tbsp. Fajita seasoning

1 c. Baby spinach

1 c. Chopped tomatoes

1/2 Sliced avocado

1/2 c. Non-fat sour cream

Olive oil

4-6 Tortillas

2 tbsp. Butter

1 Medium onion

Preparation

For chicken, drizzle with olive oil and sprinkle with fajita seasoning and grill until done. Slice thin and keep warm. While grilling chicken, melt butter in pan. Slice onions thin and place in pan with butter. Cover and cook until soft. Chop tomatoes, rinse spinach, slice avocado, put out the sour cream, cheese and tortillas. Let everyone assemble with whatever they like!

Cook's Notes

The spinach adds extra nutrition instead of using lettuce.
