Baked Zucchini Hoagies

Ingredients

1 t. Butter

2 Med. Zucchini, cubed

1 pinch Red Pepper Flakes

1 c. Marinara Sauce

1 1/2 c. Mozzarella Cheese, shredded

4 Hoagie or Hard Bread Rolls, split

Salt & Pepper, to taste

Preparation

Preheat oven to 350*. Melt butter in skillet over medium heat. Fry the zucchini in the butter til browned and slightly tender. Season and stir in marinara sauce. Cook and stir til sauce is heated.

Spoon generous amount of the mixture into each roll. Top with a handful of mozzarella. Close the rolls and wrap individually in foil.

Bake for 15 min. or til cheese is melted.

Cook's Notes

I haven't tried it yet but yellow squash may be an acceptable substitute for the zucchini.
