Ingredients

1 cup Milk
1/4 cup Coconut milk
51/2-oz Vanilla ice cream
2 Bananas
7-oz Pineapple chunks
1 Papaya
Grated fresh coconut
Wedges of fresh pineapple

Preparation

1. Pour the milk and coconut milk into a food processor and process gently until combined. Add half of the ice cream and process gently, then add the remaining ice cream and process until smooth.

2. Add the bananas and process well, then add the pineapple chunks and papya and process until smooth.

3. Pour the mixture into tall glasses, sprinkle over the grated coconut, and decorate the rims with wedges of fresh pineapple. Serve at once.

yes and 100% of sat fat recommendation..... sounds yummy tho!! I'd go w/ the skim milk and reg. coconut milk and reduce it to 2 Tbsp. The new reduced fat creamy vanilla ice creams are awesome and would work too. add a dash of coconut extract if not feeling the full coconut taste. Kathy, RD,CDE

This may detract from the full fat taste but I'm going to try this with skim milk, lite coconut milk and frozen vanilla yogurt...it sounds great!!

I agree with the high calorie comment. Unfortunately the "average" person in the US consumes too many calories - our obesity prevalence is proof. The recipe looks great, but I would divide it into three servings.

For the average person eating three meals a day, a meal should be between 500-700 calories. For someone who needs about 2,000 calories a day and has eaten three 500 calorie meals, a 490 calorie snack would be appropriate. - Andrea Garen, MA, RD, Project Manager, Meals Matter

sorry but how is this healthy,??? it is 490 CALORIES!!!!!!!!!!!!!!!!!!!!!! that is way too much for a snack.... you would have to have it as a meal,,, and that is still too much...
