Asian Flank Steak Salad Over Cold Noodles

Ingredients

For the marinade:

1 tbs Chili oil

2 tbs Sesame oil

2 tbs Rice wine vinegar

1 tbs Chopped garlic

1 tbs Minced ginger

2 tbs Chopped scallions

1 tbs Fermented black beans

1/4 c. Soy sauce

3 lb. Flank steak (1/4 c. marinade per pound)

For Noodle Salad:

3 c. Cooked noodles (angel hair, soba or other noodles as preferred)

1 tsp Sesame oil

1 tsp Toasted sesame seeds

1 tbs Soy sauce

1 tbs Chopped scallions

1/4 tsp Crushed red pepper

2 tbs Grated carrots

Preparation

In a small bowl, combine the marinade ingredients. Mix well. Place the flank steak in a large plastic bag. Pour the marinade over the meat. Squeeze out the excess air and seal the bag. Refrigerate overnight.

Remove flank steak from the marinade and grill on both sides (about 6 minues per side). Remove and cool for 30 minutes. Refrigerate meat until cold (at least 2 hours).

Boil noodles until cooked al dente. In a bowl, toss together the noodles, sesame oil, sesame seeds, soy sauce, scallions, red pepper and carrots. Adjust seasonings as desired.
