Blackberry Peach Crunch

When you harvest more wild fruit than you can eat at once, here's a good way to handle it.

Ingredients

Filling:

12 Medium peaches, sliced

8 cups Blackberries

2 cups Fruit juice

6 tablespoons Quick-- cooking tapioca

1/4 cup Concentrated sweetener

Topping:

4 cups Oats

2 1/2 cups Brown rice flour

1 1/4 cups Apple juice concentrate

1 cup Cornmeal

1/2 cup Vegetable oil

2 tablespoons Cinnamon

2 teaspoons Almond extract

2 teaspoons Sea salts

Preparation

Mix the filling ingredients in place in an oiled baking dish. Mix the topping ingredients and place on top of the filling. Bake uncovered in a preheated 350° F oven for 25 to 40 minutes, or until the filling is thank in the topping is slightly brown and fragrant.
