Mix all dry ingredients, then add oil and eggs. Beat until smooth. Add water & vanilla as well. Spread 1 tablespoon of the batter in a 4” circle onto Greased baking sheet.
Repeat to make 4 circles. Bake for Approximately 10-12 mins or until circles are a light brown. DO NOT UNDERBAKE or they will not shape well.
Remove one at a time from the oven with a wide spatula & onto the centre of a pot holder, add fortune and the fold, pinching the edges to seal. Remember to work quickly, push the sealed side over the edge of a coffee cup to curve into the fortune cookie. Shape cookie points down, into a muffin pan to cool and retain shape.
Can be stored in an airtight container for up to two weeks.
