2 1/2 cups Peeled, sliced baking potato
3 tablespoons Skim milk
2 tablespoons Plain nonfat yogurt
1/4 teaspoon Salt
1/8 teaspoon Ground white pepper
1 1/2 tablespoons Minced fresh basil
Fresh basil sprigs (optional)
1. Place potato in a medium saucepan; add water to cover. Bring to a boil; cook 15 minutes or until tender. Drain potato, and place in a large bowl. Beat at medium speed of an electric mixer 1 minute or until smooth.
2. Combine milk and next 3 ingredients; gradually add milk mixture to potato, beating at medium speed until smooth. Stir in minced basil. Garnish with fresh basil sprigs, if desired. Makes 6 servings. (serving - 1/2 cup)
