Bruscetta

Ingredients

1 Loaf french bread, sliced

6 Roma tomatoes, sliced thin

1 Head garlic, roasted and chopped

Fresh basil

Fresh oregano

Fresh thyme

1 pkg Feta cheese

3/4 c. Extra virgin olive oil

White truffle oil

Sea salt

Preparation

Roast one head of garlic in 350 degree oven for 15 minutes. Peel and chop.

In a small bowl, combine extra virgin olive oil, 1 sprig of chopped fresh basil, 2 sprigs of chopped fresh oregano, 1 sprig of chopped fresh thyme, and roasted, chopped garlic. Let marinate.

Slice tomatoes in the food processor. Place in large baking dish and pour olive oil mixture over. Cover and let marinate.

Slice french bread on the diagonal into 3/8 inch slices.

When ready to serve, pre-heat oven to broil, place bread slices on cookie sheets. Toast bread lightly on one side (less than 1 minute), flip each slice and toast the other side lightly.

Remove from oven. Use a pastry brush to coat each piece of toast with oil mixture. Place tomato slices on each piece. Add fresh basil leaves if desired. Spoon remaining garlic/herbs from oil on top of tomatoes. Crumble feta cheese on top. Lightly sprinkle with truffle oil and sea salt. Return to oven briefly to heat (less than 30 seconds).

Cook's Notes

Cutting the french bread with an electric knif makes it easy. Slicing the bread on the diagonal makes it easier for your guests to bite into. Make it ahead of time: I like to slice the bread, slice the tomatoes and marinate them in the oil mixture the day before.
