Sweet and Sour Pork Pasta

A different take on Sweet and Sour Pork and a great way to use up leftover pork.

Ingredients

2 Large grilled or baked boneless pork chops (diced)

1/2 Large green bell pepper sliced

1 can Crushed pineapple drained

1 Small onion sliced

1 clove Garlic chopped

1/2 cup Barbeque sauce (your choice of flavor)

2 tbsp Olive oil

6 cups Cooked pasta (your choice)

Preparation

Prepare pasta according to package directions. Meanwhile in a large skillet over medium heat: Saute diced pork, onions, green pepper and garlic in olive oil until onions and peppers are soft, but not mushy. Add drained crushed pineapple and barbeque sauce and mix well. Let simmer for several minutes to let flavors combine. Combine sweet and sour pork mixture with drained pasta and serve.

Cook's Notes

This can also be made with the rice of your choice instead of pasta.
