Extending the Table: A World Community Cookbook
4 Eggs, hard-cooked and chopped
2 Lge. avocados, chopped
2 t. Lemon juice
1/8 t. Garlic powder
Salt and pepper
Combine eggs and avocados in serving bowl.
Sprinkle with salt and pepper, lemon juice and garlic powder.
Stir gently and chill.

I am very excited about this. I would never have thought to put eggs with avocado, but I am going to try this right away. It has all the features I like in a lunch salad, without mayonaise--which adds fat to the fat (avocado).
