Ingredients
4 Baking potatoes
1 tbl. Oil
2 tsp. Coarse sea salt
2 tbl. All-purpose flour
Pinch of Cayenne pepper
1/2 tsp. Dried thyme
8 Chicken drumsticks, skin removed
1 medium egg
2 tbl. Water
6 tbl. Dry white bread crumbs
Salt and pepper
Preparation
1. Preheat the oven to 400 degrees. Wash and scrub the potatoes, cutting them into 8 equal portions. Place in a clean plastic bag and add the oil. Seal and shake well to coat.
2. Arrange the potato wedges skin side down, on a non-stick cookie sheet, sprinkle over the sea salt, and bake in the oven for 30-35 minutes until they are tender and golden.
3. Meanwhile, miz the flour, spices, thyme , and seasoning together on a plate. Press the chicken drumsticks into the seasoned flour to lightly coat.
4. On one plate, mix together the egg and water. On another plate sprinkle the bread crumbs. Dip the chicken drumsticks first in the egg and then in the breadcrumbs. Place on a non-stick cookie sheet.
5. Bake the chicken drumsticks alonside the potato wedges for 30 minutes, turning after 15 minutes, until both potatoes and chicken are tender and cooked through.
6. Drain the potato wedges throughly on absorbent paper towels to remove any excess fat and serve with the chicken.
