Best Family Meatloaf

This meatloaf is moist yet holds together well. Let stand 5 minutes to allow firmness for slicing.

Ingredients

1 1/2 lb. Lean ground chuck (beef)

1 c Low sodium tomato juice

3/4 c Quaker Oats (Quick or Old Fashioned Rolled Oats, uncooked)

1 beaten Egg (may use egg substitute)

1/4 c Chopped onion

1 tsp. Salt

1/4 tsp. Black pepper

Preparation

Preheat oven to 350 degrees. Combine all ingredients in large bowl. Mix well by hand. Shape into loaf in an ungreased 8 X 4-inch loaf or bread pan. Garnish with ketchup if desired. If you wish, insert a meat thermometer into the middle of the loaf (not touching the bottom of the pan). Bake thoroughly or until meat thermometer registers 165-170 degrees (approximately 1 hour). Let stand for 5 minutes before serving.
