Marinate chicken in beer, ginger and italian seasoning by pacing all into a ziplock bag inside the fridge for up to 24 hours.
Heat oven tp 400F.
Steam potatoes 5-7 mins, until almost cooked.
Add soy sauce to chicken. Place chicken into a 9x13 baking dish. Place onions on top of chicken and place the dish into the oven.
Bake for 10 mins. Take chicken out of the dish and add mushrooms and potatoes, mixing with chicken juices. Add salt, pepper as desired. Place chicken on top of mushroom and potatoes so that is turned upside down from the way it was baked previously. Add onions on top. Bake for another 10 mins.
Remove all from oven and place into a covered pot or serving dish. Mix and let rest for 5-10 mins.
