SPRAY large non-stick skillet with cooking spray. heat on medium heat 30 seconds; add chicken. Cook and stir 6 minutes or until chicken is cooked through. Remove chicken from skillet; cover to keep warm.
HEAT dressing in same skillet on medium-high heat. Add vegetables; cook and stir 3 minutes. Add chicken peanuts and soy sauce; cook an additional 2 min. or until vegetables are crisp-tender and mizture is heated through, stirring frequently.
SERVE over salad greens.
