Spinach Wrap Quick n Easy

I thought this up and love it!

I was trying to figure ways to get more greens into my diet and came up with this. I love it!

Ingredients

1/2 to 3/4 cup Cooked spinach

1 Wheat or corn tortilla

1 t Olive oil

1-2 t Cheddar or other cheese

Preparation

I usually use frozen spinach, but you can use fresh. I cook in microwave.

Put the cooked spinach in the middle of the tortilla. Sprinkle with cheese. Roll and bake.

I bake this in my toaster oven for about 10 - 12 minutes at 375.

After baked, I put 1 T of olive oil over the top.

Cook's Notes

I have used other greens with this. And sometimes I use feta instead of cheddar. I think you could use a lot of different cheeses. If I'm making this for dinner, I will make 2 of them. They are also good with some sunflower seeds or slivered almonds mixed into the greens before you roll them up.
