Preheat oven to 350 degrees. Remove potato pulp from baked potato, leaving about 1/4 inch. Mash removed potato pulp. Chop 2 whole eggs and 4 egg whites. Discard 2 egg yolks. Stir green chilies, cheese, hot pepper and salt into potato pulp.
Equally divide egg and potato mixture into each of the potato skins. Garnish with sour cream and onions. Bake for 7-10 minutes until thoroughly heated.
