Beef and Broccoli Skillet Casserole

Just what busy people need, a one dish dinner.

Ingredients

1 pound Beef eye of round (steak orroast) - all visible fat removed- cut into 1/2 inch chunks

1 (1 pound) bag Frozen broccoli florets cut into 1 inch chunks

3 cups Hotwater

1 (1 oz) envelope of dry onion soup mix

3 cups Instant rice

3/4 cup Westernfat free salad dressing

Preparation

In a 12 inch non-stick skillet, cook beef on high for 3 to 4 minutes or until bottom is cooked. Turn over.

pour broccoli, water and dry onion soup mix over beef. Stir until soup mix is disolved. Cover. Cook on high for 6 minutes.

Add rice. Stir until rice is covered with liquid. Turn off heat. Cover. Let sit 5 minutes.

Stir in Western dressing. Serve immediatly. Serve with light soy sauce on the side if desired.

Cook's Notes

NOTE: Pork tenderloin can be substituted instead of eye of round beef if desired. It tasts equally as good. Yields 6 1 cup servings.
