Stir-fried Prawns with Ginger & Spring Onions

A very simple, traditional Shanghainese prawn dish

Ingredients

300 grams Fresh prawns, shelled & deveined

2 tbsp Soya/canola oil

1 1inch piece of ginger, sliced in strips

1 Medium bunch of spring onions sliced in short lengths

2 -3 tbsp Chinese rice wine or dry sherry

2 tsp Salt

Preparation

Heat the oil in a wok over high heat. Add the salt and ginger and stir fry for 1 minute. Add the spring onions and stir for a minute, then add the rice wine. Finally add the prawns and stir fry quickly until they turn pink. Do not over cook the prawns. Serve immediately.
