Dissolve salt and sugar in 3 q. cold water in 2-gallon zip lock bag, add chops pressing out as much air as possible, and refrigerate for 1 hour.
Dry thoroughly with paper towels.
Coat chops with season.
Broil for 5 minutes, turn and cook for 5 more minutes.
Transfere to platter, tent loosely with foil and let rest 5 minutes.
