Black Bean Chili

A cross between chili, hot dish and mexican fiesta. Great on tortillas, rice, over nacho chips or just as is.

Ingredients

1 can Black Beans

1 can Tomatoes, diced

1 can Whole kernal corn

1/2 Onion, diced

1 tsp Garlic, minced

1 tsp Olive oil

1 tsp Thyme

1-2 tsp Cayane pepper

1 tbs Tabasco sauce

2 tbs Lime juice

Salt and pepper to taste

--OPTIONAL--

Chicken Breast or Hamburger

1 Green, red or yellow pepper, diced

1 Chipotle chili, diced

1/2 cup Shredded cheddar cheese

Brown Rice

Tortillas or chips

Preparation

Brown meat and set aside (if using).

Dice onion and green pepper.

Saute onion, green pepper and garlic in olive oil.

Add meat, beans, tomatoes and corn.

Add remaining seasonings.

Simmer for 15 minutes or so.

Cook's Notes

Serve over rice or with tortillas and chips. Sprinkle cheese on top. I like to add the lime juice over the top after it's done cooking.
