Mapo Doufu (Spicy Tofu with Minced Pork)

This is a classic Chinese dish found on most Chinese restaurant menus in China and abroad - so easy to make and delicious to eat!

Ingredients

350g Lean minced pork

200g Soft tofu (silken tofu)

2-3 tbsp Lee Kum Kee Guilin Chilli Sauce

1 tbsp Soya or groundnut oil

1 Chicken stock cube, minced

1-2 tsp Prickly ash powder (optional)

1 Handful spring onion, finely sliced

Preparation

Drain the tofu in a bowl, then cut into smallish cubes. Heat the oil in a wok over high heat. Add the pork and chilli sauce and stir fry until the pork is cooked. Add the tofu, prickly ash powder and minced stock cube and gently stir through the sauce so as not to break up the tofu too much. After about 3 minutes it should be ready - sprinkle over the spring onion and serve.

Cook's Notes

**Prickly ash powder or seeds are used in many spicy Chinese dishes but may not be readily available outside of China. There is no substitute for this interesting spice which has a numbing effect on the mouth! This dish tastes just as good without it.
