Beens & Greens Soup

Ingredients

3 tbsp Olive oil

1 Large white onion, sliced thinly

3 Garlic cloves, chopped very finely

2 -3 Mild green chilies, such an Anaheim, deseeded & chopped

1 tsp Dried oregano

2 ¾ cups Shredded savoy cabbage or kale

14 oz/ 400g canned borlotti beans, rinsed

3 ¾ cups Chicken or vegetable stock

Salt & pepper

3 tbsp Chopped fresh cilantro, to garnish

Preparation

Heat the oil in a large pan over medium heat. Cook the onion for 5-7 minutes, or until soft.

Add the garlic, chilies, and oregano. Cook for a few seconds, or until garlic is just beginning to color. Add the cabbage, beans and stock. Season with salt and pepper.

Bring to a boil, then cover, and simmer for 7-10 minutes, or until the cabbage is just tender.

Sprinkle with the cilantro just before serving.
