Shrimp and Pasta with veggies

This is a zestful pasta dish with shrimp and vegetables.

Ingredients

1lb Peeled and deveined shrimp

2 Small zucchini sliced

1/2

Small oinion chopped

2 cloves Od garlic crushed

1 package Frozen asparagus (thawed, and cut into 1/4)

Red pepper flakes for taste

Black pepper to taste

1 Yellow pepper cut into 1/2 in pieces

2 t Oilive oil

1/2-3/4 lb Wheat pasta (i.e. linguine, penne, angel hair...)

2 t Grated parm cheese

Preparation

Heat oil in the bottom of a large saute pan. Add pepper flakes and onions, when the onions start to soften a little add the garlic so it doesn't burn. As soon as you smell the garlic start adding the shrimp and veggies. In a separte pot of salted, boiling water add pasta and cook until done and drain. Combine shrimp and veggies in a bowl and sprinkle with black pepper and parm cheese. Serve with a salad.

You can add other veggies as season permits. Red onions are good, broccoli, shredded carrots, yellow squash, tomatos...it is very versitile. Red pepper flake depends on how spicy you like it. I don't use salt in it because of the cheese and the pasta, but you can if you need to. I hope this helps....it is also one of those meals that can be ready for the table in about 30 minutes (or less) if you prepare in advance.
