Slow cooker split pea and ham soup

Ingredients

500g Dried split green peas, rinsed

1 Meaty ham or bacon bone

3 Carrots, peeled and sliced

1/2 cup Chopped onion

2 Celery sticks, chopped

1-2 cloves Garlic

1 Bay leaf

2 Tspn dried parsley

Salt

Pepper

1.5l Water

Crusty bread (to accompany)

Preparation

1) Layer ingredients in slow cooker in the order given, pour in water. Do not stir.

2) Cover and cook on high for 4-5 hours or on low for 8-10 hours until the peas are very soft and the ham falls off the bone. Remove bones and bay leaf. Mash peas to thicken more if desired.

I called it "shrek" soup to get my daughter to try it and she really like it. I used chicken broth instead of water and frozen crinkle cut carrots. Very good soup!

This does freeze well, and still tastes great every time you thaw it!! I used ham hocks and they come two to a container so I doubled everything. Except the water! I used about 2 liters and it worked really well, also I added cubed ham since not much useable ham comes off the hocks, but the flavor's great.
