Bacon and Lentil Casserole

Ingredients

oli

1 Tbspn diced onion

1 Tspn garlic

3-4 Rashers of bacon

400g Tomatoes, tinned

1 Tblspn tomato paste

1/8 Tspn dried chill powder

400g Drained brown lentils, tinned

1/2 cup Chicken stock

6 Mushrooms

2 Zucchinis, diced

Preparation

1) Heat oil in a frying pan and saute onion, garlic and bacon, until the onion is clear and the bacon cooked.

2) Add tomatoes, tomato paste, chilli powder, chicken stock, vegetables and bring to the boil. Allow to simmer until the vegetables are cooked.

3) Add drained lentils and stir through until heated before serving.
