simple and flavorful with ingredients you have on hand
6 Strips bacon, cooked & crumbled
2 Eggs, slightly beaten
1/4 c Minced green onions
1/2 t Sugar
4 c Cold cooked rice
4 t Oil
3 t Soy sauce
1 Carrot, sliced thin
3/4 c Peas
1/2 c Mushrooms
Cook scrambled eggs. Heat 3 T oil in clean skillet for 2 minutes. Add green onions and stir-fry briefly; add rice. Blend in soy sauce and sugar. Add eggs, onions and bacon. Mix thoroughly. Can keep warm in oven.
Very flavorful. Use whatever veggies you have on hand.
