Easy Cheesy Beef/Turkey Enchiladas

Original Idea

Ingredients

8 To 12 Corn Tortillas

1 lbs Lean Ground Beef or Turkey

1 can Campbells Cheddar Cheese Soup

1 *can Mild Enchillada Sauce (Red is best for beef, Green for Turkey)

1 to 2 cups Shredded Cheddar Cheese

Preparation

Pre-Heat Oven to 350 degrees

In a Skillet, brown meat until pink and drain fat.

Combine can of Cheddar Cheese Soup Mix and 1/2 can of Encillada Sauce with the ground beef to make enchillada filling.

Heat Oil in a skillet to about 350.

Dip corn tortillas in oil to make them pliable. Spoon about 2 tablespoons of filling into the tortilla, roll, and place in a 9X14 glass baking dish.

Top enchilladas with remaining sauce and sprinkle cheese over them.

Heat in oven for 10-15 minutes to melt the cheese.

Cook's Notes

* Enchillada Sauce can be made by combining tomato sauce with chilli powder to taste.
