Ingredients

1 19-oz Can black beans, drained and rinsed
1/2 tsp Cumin
1/2 tsp Salt
1/4 tsp Ground black pepper
1/4 tsp Garlic powder
1/4 cup Salsa
1/4 cup Vegetable stock
4 slices Bread, toasted
1/2 cup Vegan "cheese," finely grated (optional)

Preparation

In medium pot, combine the black beans, cumin, salt, pepper, garlic, salsa, and stock; bring to a boil. Reduce heat and simmer for 8-10 minutes. Mash beans with back of spoon or potato masher and serve over toast garnished with grated "cheese." Makes 2 large or 4 small servings.
