Sauce:
2 tbsp Cashew butter or peanut butter
1-2 tbsp Chili garlic sauce
1 tbsp Tamari
1 tbsp Water
Stir Fry:
1/4 c. Cashews
1-2 tsp. Olive oil
1 Large onion, sliced
1 Lg. carrot, sliced diagonally
1 c. Broccoli florets, chopped
1 Red pepper, diced
1 c. Chopped baby bok choy
1 c. Snow pea pods

Preparation
Combine the cashew butter, chili garlic sauce, tamari and water in a small bowl and stir to make a smooth paste. If you wish, toast the cashews lightly in a small frying pan or in the oven for a few minutes. Heat the oil in a wok or pan, add the onion, and cook over high heat until it begins to brown, about 3 minutes. Add the carrot and cook for 1 minute; add the broccoli and cook for another 30 seconds; then add the red pepper, bok choy and snow peas, and cook just long enough to heat through. Add the sauce, stir to combine, sprinkle with cashews, and serve over rice.
