Chicken Broth (Brodo)

A light clear chicken stock/broth that can be eaten as a soup on its own or with pastina (little pasta) or used as a stock base for many wonderful dishes.

Ingredients

5 Chicken frames

1 Peeled left whole brown onion

2 Carrots

2 Celery stalks

6 Peppercorns

2 Bay leaves

3 litres Water

Preparation

Add everthing into the pot and bring to the boil, then let simmer. Skim scum and discard during the cooking process. Cook for 1 hour 30 minutes simmering gently.

Pour out into a large bowl into which a colander and CLEAN tea towel has been placed to catch the chicken and vegetables. Discard.

Your broth (Brodo) is ready to use. (Great for Risotto) Generally the fat that accumulates on the top will hardened in the refrigerator for easy removal. Discard.
