Sausage and Bell Pepper Stew

Traditional Greek dish.

Ingredients

3 tbs Olive Oil

1 1/2lbs Pork link sausages, pricked evenly

2 Onions, sliced in rings

5 Bell peppers, various colors, cut into 1/2" strips

1 1/2lbs Tomatoes, peeled ad sliced

3 Garlic cloves, crushed

2 tsp Dried oregano

1/2 cup Dry red wine

Salt and pepper

Chopped fresh sage, to garnish

Preparation

Heat oil in large skillet and cook sausages, turning until browned on all sides. Place on paper towels to drain.

Add onion to skillet with bell peppers and cook about 10 minutes or until softened. Stir in tomatoes, garlic and oregano.

Return sausages to pan and add wine. Season with salt and pepper and simmer, covered, about 1 hour or until sausages are cooked through, adding water if necessary. Serve sprinkled with fresh chopped sage.
