Cut chicken breasts into 1" pieces and place in shallow dish.
In small bowl, mix garlic, salt and pepper, lemon juice and olive oil. Pour over chicken and mix well. Cover and marinate 2-4 hours in refridgerator, turning occasionally.
Spread parsley out on a plate. Divide chicken into 6 equal portions and thread onto six wooden skewers. Roll each in parsley to coat.
Arrange skewers on oiled broiler rack and cook 5-10 minutes or until golden and cooked through, turning to brown evenly. Baste with remaining marinade during cook time for more flavor.
