Chicken and Fruit Stir-Fry

My fiance's family were convinced I didn't know how to cook so I came up with this simple meal to prove them wrong and it's now one of their favourites!

Ingredients

½ pkg Chinese Egg noodles

2 Boiled Boneless Skinless Chicken Breast (shredded)

1 Bell Pepper colour of your choice cut into strips.

1/2 A red onion cut into strips

10 Mushrooms chopped

1/2 A small can of Pineapple

1/2 A small can of mangos(optional)

1/2 A small bottle of VH Honey Garlic sauce

1 tbs Extra Virgin Olive Oil

Preparation

Boil the noodles as directed on the package (I usually let it go for about 7-10 mins)

Heat Olive Oil in a Large Skillet over Medium-High Heat.

After it has sufficiently heated, sauté the mushrooms, bell pepper and onions until nicely cooked.

Add Boiled Chicken, Pineapple and Mangos and mix well in the skillet until Pineapple and Chicken are nicely heated.

Reduce heat to Medium Low and add the VH Honey Garlic Sauce.

Cook at Medium Low for about 5-10 mins

Remove from heat.

Put cooked noodles on your dinner plates and top with the chicken and fruit mixture. Serve.

Cook's Notes

Serves 4. Boil Chicken the night before for an even quicker prep time. Good for that quick meal when you come home late from work.

This recipe was a big hit with my family. I don't usually use boiled chicked because I Iike to marinate the meat before cooking. However, I made this dish and not only did everyone ask for second helpings, but some family members were asking if there was any left over later that evening. The only substitution I made was to use fresh garlic and honey in place of the VH honey garlic sauce. This is definitey going into my cookbook to use again.
