Barbecue Meat-Loaf (Slow-Cook)

Tinkering, hated taste of regular meatloaf

Okay, so meatloaf is easy, but some families hate it plain. And I'm not about to do all the fancy making my own sauce, etc. So here's the no-hassle, great-tasting, short-cut version my family loves.

Ingredients

2 lbs Ground beef (reduced fat recommended)

1 cup Quick-cook oats, or bread crumbs, or cracker crumbs, etc. (Pretty much just so long as it's small-texture and carbohydrate)

1 Envelope standard dry onion soup mix

2 Eggs

1 bottle Hickory barbecue sauce

Preparation

Defrost hamburger in refrigerator the night before, if necessary. Otherwise, you're stuck using the microwave defrost cycle.

Start in the morning before you start your day.

Wash hands. You'll see why.

Combine meat, oats, soup mix and eggs with about 1/3 cup of barbecue sauce. This isn't detail work, just get in there and squish it with your hands until it's all mixed up.

Form it into a large lump and put it into the slow cooker.

Drizzle more barbecue sauce on top until it looks right to you.

Put the lid on it and leave to enjoy your day (6-8 hours).

Come home to a great meal and let the whole family enjoy. Congratulations! You're a true "Gourmet Goof-off!" (Just don't tell them how easy it was.)

Cook's Notes

You can cut cook time to about 5 hours (give or take) by turning it on high, but sometimes high setting can scorch the meat or dry it out.
