Easy Cheezy Creamy Chicken-Rice

I put this together one night, and the family sucked it in. Great with a green veggie as a side.

Ingredients

3-4 Boneless, skinless chicken breasts
(other chicken cuts can be substituted)
1 can Cream of (chicken or mushroom) soup
1/4 cup Milk
2 cups Uncooked (Uncle Ben's) brown rice
(or white, if your family protests)
4 cups Water (to cook rice)
1 package Shredded white cheese
(italian mix, mozzarella, swiss, etc.)
Extra salt/pepper/spice to customize -if wished- after first taste

Preparation

Preheat oven to 350 degrees.

Skillet-brown or electric-grill chicken until done

(on my electric grill it's about 12 min if it starts frozen)

While chicken is browning, start rice to cook (combine rice and water, place on stove on high, when comes to a boil, turn it to lowest heat that will continue little bubbles and let it cook about 10 minutes. Taste test for doneness BEFORE removing it from heat.).

Place chicken in casserole dish or large cake pan.

Drain rice (if needed) and combine rice, mushroom soup, milk and cheese. Stir.

Pour the rice mixture over the chicken.

Put in oven to bake for about 5-10 minutes or until hot enough to be yummy (remember, all the ingredients are "done" and don't really need to be cooked at this point.)

Serve and smile. Congratulations! Now you're a true "Gourmet Goof-off!"

Cook's Notes

This can be tinkered with so many ways to preference. Brown rice adds more nutrition. Boneless, skinless breasts are easier for me, but if you want to cut up your own chicken, it really is cheaper (it's just not for me). Extra salt/pepper/spice to taste, esp if "as is" seems bland for your region's cuisine. Customize to wishes.

My family is not big on rice so I made this with stuffing and it was wonderful. I made the stuffing and lined the baking pan with it then I put the chicken on top of the bed of stuffing then I poured the mixture of milk, soup and cheddar cheese over that and cooked in the oven until bubbly. Just wonderful. Thanks.

My husband and I really enjoyed this recipe--very filling and delicious. I changed things up a bit by using cheddar cheese instead of white cheese and then adding 4 oz. cream cheese for a little extra flavor. We also used white rice and the flavors mixed very well together. I made it a second time and added sour cream instead of the cream cheese, which was another fun and flavorful variation.

This came out AMAZING! I am a nanny for a family and I never used to cook, but the family loved this! I added salt and pepper to the mixture and it was perfection. Thanks for the great recipe! :)

The recipe as written is very bland. I added some baby bam to spice it up a little. We also added a layer of asparagus on top and then shredded fresh parmesan before baking. After some creativity my family loves it ;0)

I used California brown rice and it took forever to cook! Be warned...

My family really enjoyed it but do not follow recipe completely. It was very bland. My son and husband ate it up. I myself was not wild about it.
