Broccoli Quiche Lorraine

Great recipe to use when you have leftover ham, especally around the holidays.

Ingredients

2 cups Fresh or frozen broccoli

2 tablespoons Dried bread crumbs

2 ounces Lean deli ham, diced

1 cup Pre-shredded partskim mozzarella cheese

5 Large eggs

1 cup 1% lowfat milk

1/4 teaspoon Salt

1/8 teaspoon Dried thyme or 1/2 teaspoon fresh thyme

Pinch of pepper

1/4 cup Grated Paarmesan cheese

Preparation

1. Preheat the oven to 375°F.

2. Steam the broccoli until tender, about 5 minutes. Coarsely chop and set aside.

3. Lightly oil or coat a 9-inch pie plate with nonstick cooking spray. Sprinkle the bottom and sides with the bread crumbs. Arrange the broccoli, ham, and mozzarella cheese over the bottom of the pie plate.

4. Whisk together the eggs, milk, salt, thyme, and pepper in a medium bowl. Pour the egg mixture over the broccoli and top with the Parmesan cheese.

5. Bake uncovered until golden brown, 35 to 40 minutes

Cook's Notes

With this recipe, just add a side of fruit and you have a well balanced meal.
