Cranberry Salad

This is great for Holiday's!!

Ingredients

1 lb Fresh or Frozen Cranberries

2 c Granulated Sugar

1 Pt Whipping Cream

1 Small Package Mini Marshmallows (about 1 1/2 C worth)

1 - 1lb 4oz can Crushed Pineapple

1 c Chopped Pecans

Serves 12-15

Preparation

Step 1

Chop Cranberries in blender until there are no big pieces.

Add sugar to cranberries;set aside to chill until berries have absorbed all the sugar. This usually takes several hours so I do this first thing in the Morning

Set crushed pineapple in strainer in frige to drain overnight.

Step 2

Whip Whipping cream until peeks form (do not whip to much or you will have butter!)

Add marshmallows to Whipped Cream (do not combine with Cranberry mix)

Refrigerate for 2-3 hours until marshmallows have swollen.

Step 3

Add Drained and chilled pineapple and chopped pecans together in LARGE Bowl

Step 4

Add Cranberries and Whipped Cream mixture to Pineapple Mixture. Stir gently til all is combined.

Let Chill overnight for next day.

Cook's Notes

This is a great recipe for a potluck.

I found that Frozen Cranberries chop better in a blender

Coolwhip maybe used, but the marshmallows do not dissolve very well. Tastes just as good.

I am not sure on the Nutrient Info but I know there is lots of calories and Sugar
