Ingredients
1 lbs Ground Beef or 2 lbs Chicken.
1/2 Medium Onion, diced.
1 Green Bell Peppers, diced.
1 pkg Taco Seasoning mix.
1/2 cup Water.
1 bag Pre-cut Romaine Lettuce.
1 pkg Grape Tomatoes.
1 4 oz. Can sliced Black Olives
1 11 oz. Can Mexican Corn.
1 15.5 oz. Can Black Beans.
1 Avocado, diced (optional).
1 cup Green chiles (optional).
1 8 oz. Pkg Fat Free Cheddar Cheese.
1 jar Salsa.
1/2 cup Fat Free Sour Cream or Fat Free plain yogurt
1 Medium bag Tortilla Chips (optional).
Preparation
Brown the ground beef, onions and peppers in a large skillet or you could use Ground chicken or even chicken breast cut into strips like a stir-fry. I use 90% lean ground beef for low-fat cooking. Drain. Add the water and the seasoning mix and simmer according to the instructions on the package.
While that is cooking, combine all of the remaining ingredients in a large mixing bowl except the tortilla chips, 1/2 jar of salsa, 1/2 cup fat free cheddar cheese and 1/4 cup of sour cream to top. Toss together thoroughly. Add the meat mixture right before serving. Top with the remaining salsa and sour cream and serve on a bed of tortilla chips if desired.
Cook's Notes
I add mild salsa into the salad and then have mild, medium and hot salsa on the side for variety. You can serve it with the green chilis on the side as well. I also keep the tortilla chips on the side for those of us who are watching their carbs.
