Ingredients

15 oz. Can Black Beans
15 oz. Can Diced tomatoes with Garlic and Olive Oil
1 Onion, diced
1 tablespoon Balsamic Vinegar
Thyme
Brown Rice

Preparation

Cook onion in a little olive oil until tender. Add mostly drained black beans and tomatoes. Cook until warm and liquid thickens. Add vinegar and thyme. Serve over rice.

The vinegar paired with the tomatoes made it a little too icky sweet. I had to add some cumin and cayenne pepper to balance it out enough to eat. Easy to prepare, though.

It is amazing the flavor that one tablespoon of balsamic vinegar adds to the classic bean and tomato pairing. Great over rice and leftovers make great burritto fillings!
