Farmhouse BBQ Muffins

The BBQ sauce in this recipe is sweet, rich and very filling. I use the seasoned meat in frito chili pies and Mexican haystacks.

Ingredients

10 Ct. refrigerated buttermilk biscuits

1 lb Ground beef

1/2 cup Ketchup

3 tbsp Brown sugar

1 tbsp Cider vinegar

1/2 tsp Chili powder

1 cup Shredded cheddar cheese

Preparation

1. Grease muffin tins with cooking spray. Flatten each biscuit and press into muffin tins. Set aside.

2. Brown ground beef in skillet; drain.

3. Mix ketchup, brown sugar, vinegar and chili powder in a small bowl. (This is a wondeful homemade BBQ sauce.) Add to meat and mix well.

4. Spoon meat mixture into muffin cups and sprinkle with cheese.

5. Bake at 375 degrees for 18-20 minutes.

Cook's Notes

Sometimes I use jumbo biscuits that only come in 8 count tubes, because they don't tear as easily when you flatten and stretch them. You can stretch the meat mixture to 13-14 muffin cups if you want, and bake the extra biscuits separately.

These will reheat in the microwave well, for about 45 seconds.
