Mashed Potato Casserole

Ingredients

2 pounds Baking potatoes -- cut into 1-inch pieces

1 (8-ounce) package Neufchatel cheese (that’s low fat cream

Cheese)

1 cup Plain nonfat yogurt

1 teaspoon Garlic powder

Salt and pepper to taste

2 tablespoons Whipped butter -- melted

1/2 teaspoon Paprika

Preparation

Place potatoes in a saucepan; add water to cover, and bring

to a boil.

Cover, reduce heat, and simmer 20 minutes or until very

tender; drain.

Combine potato, cream cheese and the next 3 ingredients in

a bowl and mash

your heart out.

Spoon into an 9 x 13 inch baking dish, lightly oiled;

drizzle butter

over the top of the potato mixture. Sprinkle with paprika

for color.

Bake uncovered at 350 degrees for 30 minutes.
