Pumpkin Bread

I adore pumpkin bread and it just seems right to make it this time of year. I got the recipe I use from our church cookbook.

Ingredients

3 c. Sugar

1 tsp. Cinnamon

1 tsp. Nutmeg

2 tsp. Baking soda

1.5 tsp. Salt

3.5 c. Flour

2 c. Cooked pumpkin (I use one 15 oz. can)

1 c. Oil

4 Eggs

2/3 c. Water

Pecans (opt.)

Preparation

Mix dry ingredients. Make a well and add all eggs and

liquid. Mix well. Add

pecans. Divide into three greased loaf pans and bake at

350 degrees for 45

minutes or until knife inserted in center comes out clean.

Note: It isn't in the original recipe but I also add about

a tsp. of vanilla

extract. Bread freezes well.
