16 servings

Ingredients

1 package Active dry yeast

1/4c Warm water

1/2c Warm fat free milk

1 Egg

2t Butter, softened

1t Grated orange peel

1t Salt

3t Plus 1/2c sugar, divided

2 3/4 to 3 1/4c All purpose flour

1c Thinly sliced peeled apples

1c Dried cranberries

1/2c Chopped walnuts

1 1/2t Ground cinnamon

1 Egg white

1t Water

1/2c Confectioners' sugar

1t Orange juice

Preparation

In a mixing bowl, dissolve yeast in warm water. Add the next five ing., 3T sugar and 1c flour; beat until smooth. Stir in enough remaining flour to form a soft dough. Knead until smooth and elastic, about 6-8 min. Place in a bowl coated with spray; turn once to coat. Cover and let rise in a warm place for 1 hour.

In a bowl, toss fruit, walnuts, cinnamon and remaining sugar; set aside. Punch dough down; turn onto a lightly floured surface. Roll into a 20inx10in rectangle. Combine egg white and water; chill 3T. Brush remaining mixture over dough. Spoon fruit mixture to within 1in of edges. Roll up tightly jelly roll style, starting with a long side; seal ends.

Place seam side down in a 15x10in baking pan. Pinch ends to form a ring. With scissors, cut from outside edge 2/3rds of the way toward center of ring at 1in intervals. Separate strips slightly; twist so filling shows. Cover and let rise until doubled, about 40 min.

Brush with reserved egg white mix. Bake at 375 for 20 to 25 min or until golden brown. Cover with foil during last 10 min. Remove to a wire rack and cool. Combine confectioners' sugar and orange juice; drizzle over ring.
