acorn squash w/homemade apple sauce

a tasty fall treat without guilt.

Ingredients

1 Acorn squash
2 tblsp Olive oil
 Salt & pepper to taste
5 Apples chopped
1/2 cup Light cranberry juice
1/4 cup Splenda
1 tsp Apple pie spice

Preparation

Heat oven to 350

Cut squash into 6 wedges

brush with olive oil

salt and pepper to taste

Cook squash for 20 minutes until tender when pierced with a fork

While squash is cooking, cook remaining ingredients in a saucepan on the stove until apples are tender.

Serve wedge of squash with apple sauce over it.
