Potato & Ham Soup

A twist on the typical potato soup, this adds ham and velveeta to give it some flair.

Ingredients

Potatoes:4 medium peeled & chopped

Onion: half C chopped

Ham: 1 C

Celery Salt: dash

Parsley: dash

Butter: 1 T

Velveeta cheese: 5 slices

Potato flakes: to thicken

Milk: up to 1/2 cup

Preparation

Boil potatoes in a medium sauce pan with onion until done; not quite mushy. Add ham, celery salt, parsley, butter, and velveeta. Stir until cheese is melted. Add a milk and potato flakes alternately to obtain desired consistency. Simmer until ready to serve.

Cook's Notes

Cuts the chill on a cold day, is even better the second time around.

Must try!!!!!!!Excellent recipe. I did add 1/4 c. Chicken broth and did not add the potato flakes (didn't have any so I added a little bit of flour) The cheese was the topper on the cake (so to speak). This was my first soup to ever make and it was the bomb. Carrie
