Meatless Chili

Wonderful chili! Good and good for you! You won't miss the meat at all!

Ingredients

32 oz Tomato juice (or 1 15oz can tomato sauce plus 2 cups water)

2 cups Water

1 Large can kidney beans (or 2 cups if cooked from dry beans)

1 c. Uncooked lentils

2 Medium potatoes, cubed

1 Large onion, chopped

2 Large carrots, sliced

2 tablespoons Chili powder (or more)

2 teaspoons Beef bouillon

1 teaspoon Dried oregano

1 teaspoon Garlic powder

Preparation

In a big pot, sauté the potatoes, onion and carrots just until soft in a little vegetable oil. Add all the other ingredients, bring up to a boil. Cover and simmer for 30 minutes or until the lentils are cooked. Add salt and pepper to taste. Serve with cornbread or tortilla chips and cheese and sour cream.
