Slow Cooked Brussel Sprouts

A great way to turn a "yuck" food into a "yum". Very economical too and only 1 Weight Watcher point per serving. Even my picky hubby will eat this.

Ingredients

2tsp Vegetable oil
1-lb Brussel Sprouts, trimmed
Salt
2tbs Butter
3tbs Finely chopped shallots
3/4c Chicken broth (Fat Free/Reduced Sodium if desired)

Preparation

Heat vegetable oil over high heat in a large skillet. Add Brussel sprouts and brown all over by shaking the pan often. Season with salt to taste.

Remove Brussel sprouts from pan and reduce heat to medium high. Melt butter and add shallots. Saute' the shallots for a minute or 2.

Add the sprouts back in add the broth and cover. Reduce heat to medium low and cook until sprouts are fork-tender (about 30 minutes). Serve warm.

Cook's Notes

can also add garlic if desired
